This is a recipe for Kimchi Jjigae with Marinated Korean Ribs that you can make at the comfort of your home!
What is kimchi jjigae?
Kimchi Jjigae is the quintessential Korean comfort food that’s enjoyed by many people in the world.
It’s essentially a hot stew that’s made by cooking kimchi in water along with other ingredients such as onion, garlic, canned tuna, and processed meat like spam and sausage.
These days, there’s no one definition for what kimchi jjigae is. You can add in food like baked beans, ramyun noodles, and American cheese, and it’ll still be called a jjigae.
In fact, There are many kimchi jjigae restaurants out there that operate solely based on the owner’s preference of ingredients.
Whatever you put into your jjigae though, the most important thing is that you add in some aged, fermented kimchi.
If it ain’t spicy, then it ain’t kimchi jjigae!
Kimchi jjigae ingredients
For this recipe, I added my own marinated Korean ribs to give it some juicy pork flavor.
You can also use any ribs found at meat stores or your local supermarket. I like to use my own blend of Korean ribs because it gives the stew a sweet and fatty, umami-inducing taste.
The end result was a fatty, sweet, and scrumptious stew that’s too die for.

The ingredients are:
- 2 tablespoons of water
- Aged Kimchi
- Salt
- Pepper
- Marinated Ribs
- 1/2 tbsp of minced garlic
- Scallions
- Onions
- Optional: Red pepper flake powder
Cook time: 20 minutes
Preparation: 5 minutes
Total time: 25 minutes
How to make Kimchi Jjigae with Marinated Korean Ribs
Place aged Kimchi inside of the pot.
Next, add in the marinated ribs on top of the kimchi.
Add 1/2 tablespoon of minced garlic.
Chop up the onions and scallions and add them into the pot.
Add 2 tablespoons of water to into the pot.
Once all of the ingredients are settled in, turn on the stove to a medium heat and let it cook for about 7 minutes.
Mix around the ingredients as the water starts to boil.
Tip: Coat the meat with the soup using a spoon. This will allow the meat to absorb all of the ingredients.
Optional: Add red pepper flake powder for an extra spicy kick.
Set the flame to a high and let it cook for about 8 minutes. This will allow the meat to cook thoroughly.
Turn down the flame to a low and let it simmer for about 5 minutes.
Sprinkle in a few more scallions and you’re done!
