What is Korean braised chicken?

Korean braised chicken ,or Jjimdak, is a beloved Korean recipe that’s enjoyed for its health-conscious recipe and delicious taste.

The Korean braised chicken was first made by local cooks in the ancient Korean city of Andong as a response to the rising popularity of fried chicken franchises. Korean braised chicken is generally cooked slowly in a large pan of garlic soy sauce along with glass noodles, potatoes, and vegetables such as carrots and bok choy. The end result is a mouth-watering chicken stew that’s both healthy and delicious.

The Korean braised chicken is now more popular than ever. Today, it’s enjoyed worldwide for its large portions as well as being a healthy alternative to fried chicken.

Instructions

Wash the bok choy or green cabbage thoroughly in water.

Chop up the vegetable in half and rinse it in water again.

Next, cut up the chicken into bite size portions. You can use chicken breast, but chicken tenders are usually easier to cut.

Drizzle 1/2 tbsp of olive oil into the pan. Place the chicken when the oil starts to boil. You can cover the pan with a lid to avoid splattering oil. Flip the chicken to cook them evenly.

Add water into a pot and cook at a high heat. Place the sweet potato noodle when the water starts to boil. Cook for 8 minutes then drain the water out. Leave the noodle to cool down.

Once the chicken starts to cook, add 1 tbsp of scallions, 1 tbsp of onions, and 1 tbsp of garlic into the mix. Stir gently for 4 minutes.

Add 2 tbsp of braised chicken marinade into the pot.

I like to use the Chungjungwon brand for my recipe. This one tastes mildly spicy and has just the right amount of soy sauce to my tasting.

You can find a lot of Korean brands that sell braised chicken marinade. The most popular one is Ottogi’s Braised Soy Sauce Chicken.

Coat the chicken with the marinade and let it simmer for 3 minutes.

Next, add in the vegetables and mix it with the broth.

Add in the sweet potato noodle and mix until its coated with the broth.

Let the braised chicken simmer for about five minutes in medium heat.

Taste the chicken, noodle, and vegetables and add more sauce if needed. Serve immediately.
